Sweet Potato Brownie Balls!

Ingredients
  1. 1 medium sweet potato, steamed and cooled
  2. 5 medjool dates, pitted
  3. 3 tablespoons Cacao Powder
  4. 1 tsp vanilla essence or 1/2 tsp Vanilla Powder
  5. 2 tablespoons Coconut Oil, melted
  6. 1/2 cup almond meal
  7. Raw, chocolate, melted
Instructions
  1. In a food processor, blitz your sweet potato, dates, cacao powder, vanilla essence, and coconut oil for 1 minute until all ingredients are combined.
  2. Add the almond meal and blend until incorporated.
  3. The mixture will still be quite wet – this is normal as they will form their shape once cooled.
  4. With wet hands spoon out the mixture, roll into medium sized balls and lay out on a tray lined with baking paper
  5. Place in the freezer for 1-2 hours to set (don’t leave for longer as you don’t want them rock hard)
  6. Prepare your melted chocolate.
  7. Once the balls are ready remove from the freezer and dunk in the chocolate mixture, spoon out with a tablespoon, tapping any excess chocolate and place back on the baking paper.
  8. Complete this step for the remaining balls. Because they are cold the chocolate should set almost instantly.
  9. If your balls are a bit too solid, place in the fridge until thawed.
  10. These can be kept in an airtight container in the fridge for 1 week.
