Ingredients
  1. Plain corn chips (organic)
  2. Bean mix
  3. 3 cups cooked red kidney beans
  4. 1 onion diced
  5. 2 beads of garlic crushed
  6. 4 tomatoes cut into cubes
  7. 1 tub of tomato paste
  8. 1heaped tsp minced ginger
  9. 1-2 red chilli finally chopped
  10. 1tsp cumin
  11. extra virgin olive oil
  12. Filling
  13. Lettuce or baby spinach leaves chopped finely
  14. 1 red capsicim diced
  15. 2 handfuls of snow peas – cut into 6 pieces
  16. ½ cup pitted kalamata olives diced
  17. Guacamole topping
  18. 2 avocados
  19. 1tsp lemon juice
  20. 1 pinch Celtic salt and cracked pepper
  21. remove flesh from avocado- mash and add lemon juice salt and pepper.
Instructions
  1. Bean Mix
  2. Heat oil in fry pan add onion, minced ginger garlic and chilli cook till onion soft.
  3. Add rest of ingredients and cook till a thick sauce.
  4. To serve line bowl with corn chips toasted under grill add 2 -3 heapsed tbsp of cooked bean mix in bottom then cover with lettuce or baby spinach, capsicum, snow peas, olives.
  5. Top with Guacamole topping and serve straight away.
