Chia Seed Breakfast Muffins

Chia Seed Breakfast Muffins
  1. 1 ½ cups of spelt flour
  2. 1 cup of Chia Seeds
  3. ¾ cup of Coconut Sugar
  4. 1 tbs of baking powder
  5. 1 tbs of cinnamon
  6. •1 tsp of Vanilla Powder
  7. •½ tsp of ginger
  8. •Pinch of sea salt
  9. •1 ripe banana, mashed
  10. 2 cups of nut milk
  11. ¼ cup of Coconut Oil
  12. 1 cup of berries, frozen or fresh
  13. 1 cup Walnuts
  1. Pre-heat oven to 180 degrees, grease or line a muffin tin
  2. Combine the spelt flour, chia seeds, coconut sugar, baking powder, cinnamon, ginger, salt and vanilla in a mixing bowl
  3. In a separate bowl combine the banana, milk and coconut oil.
  4. Scrape the wet mix into the dry mix, stir to combine
  5. Fold through the berries and walnuts
  6. Fill prepared tray with mixture and bake for 20 – 30 minutes
  7. Remove from oven, let cool slightly
  8. Serve warm with some extra chopped nuts and a drizzle of Coconut Nectar!
